Philly Cheesesteak Stuffed Bell Peppers
Here’s a low carb option to a hearty classic! It’s a Philly Cheesesteak that can be eaten in a pepper for the ultimate tasty meal!
Ingredients:
8 oz – roast beef, sliced in long strips
8 slices – provolone cheese
2 large green bell peppers
1 medium sweet onion, diced
6 oz – baby bella mushrooms
2 tbs butter
2 tbs olive oil
1 tbs garlic, minced
Directions:
Slice peppers in half from top to bottom. Clean out the seeds and insides
Saute onions, mushrooms, butter, oil, garlic until caramelized
Preheat oven to 400°
Add strips of roast beef to pan and cook 5-10 mins
Line inside of pepper with provolone cheese
Fill pepper with meat mixture
Add cheese slice on top
Bake 15-20 minutes, or until cheese is melted and turning golden on top
