Cooking With Locals: ‘Labor Day Breakfast Cake’

Today’s ‘Cooking With Locals’ guest is Starkville native, Kimberly Calmes Crowder. She is a graduate of Mississippi State University and a member of Delta Sigma Theta Sorority, Inc. A wife and a mother of 3, Kimberly has been a banking officer for a Virginia financial institution for the past 7 years. As a proud recipe blogger and foodie, she is sharing her renowned “Labor Day Breakfast Cake” for today’s featured recipe.
“Labor Day Breakfast Cake”
Ingredients:
2 eggs
1/2 cup applesauce
3/4 cup sugar
1 cup evaporated milk
3 cup of quick cooking oats
1 tsp salt
1 Tbsp double acting baking powder
2 Tbsp demerara sugar
1 tsp ground cinnamon
2 Tbsp of wheat germ
2 Tbsp of flax seed
1/3 cup of coconut flakes
1/3 cup of sliced almonds or nuts of your choice
Directions:
In a large mixing bowl, whisk eggs, applesauce, sugar and milk. Once creamy, add oats, salt and baking powder and mix through. (If you wish to add any fruits, add about 1 cup into the batter at this point.)
Pour batter into a 8X8 inch baking pan. Sprinkle the demerara sugar on top and bake at 350 degrees for 30 minutes. Remove from oven and let cool for a few minutes.
