Our featured “Cooking With Locals” chef of the day is Kris Lee. He is a local writer and director from Starkville. His featured recipe is a “Scotch Chocolate Cake”.
Scotch Chocolate Cake
2 cups sugar
2 cups plain flour
(Sift together and set aside)
1 stick oleo
4 tablespoons cocoa
1/2 Crisco
1 cup water
(Bring to a boil. Pour over sugar and flour mixture. Mix well and add remaining ingredients)
1 teaspoon soda dissolved in 1/2 cup buttermilk
2 eggs – beaten
1 teaspoon vanilla
(Mix with other ingredients.)
Bake for 45 minutes at 300 degrees in a greased floured oblong pan.
Icing for Scotch Chocolate Cake
Start icing 5 minutes before cake is done. Sift 1lb. powered sugar into a large bowl.
In a boiler: 1 stick oleo
4 tablespoons cocoa
6 tablespoons buttermilk
Bring to a boil and pour over powered sugar. Beat slightly.
Add: 1 teaspoon vanilla and 1 cup chopped pecans. Pour over cake while hot.
